So taco salad still counts for Taco Tuesday, right?! I grew up on this recipe and it is SO easy. It also makes enough to feed a small army; granted, I’m usually only cooking for myself and a four year old, so I always have leftovers. On to the recipe!
You will need the following:
- One pound ground beef (season to taste; I use salt, pepper, garlic powder, onion powder and a good amount of chili powder)
- One head of iceberg lettuce
- One tomato
- A package of green onions
- One can of kidney beans (I was out, so I used red beans here)
- Tortilla chips
- Catalina or salsa
- One avocado (optional)
- Sour cream (optional)
Mix it all together, top with sour cream and Catalina, and you’re all set! Super delicious. To avoid soggy leftovers, put the toppings in separate bowls, then you can even make soft tacos the next day.
