Chocolate Chip Cookies

This has been my go-to recipe for the last few years. I am a fan of soft, chewy chocolate chip cookies, and these are it! You will never look back after you try this one out. I have never made another chocolate chip cookie recipe since finding this one.

Ingredients: 
3/4unsalted butter, softened 
3/4 c organic brown sugar 
1/4 c organic granulated sugar 
1 egg (organic, pasture raised)
2 t vanilla extract 
2 c organic unbleached all purpose flour (you can substitute for Jovial all purpose einkorn flour if gluten sensitive*)
1 t baking soda 
1/2 t salt 
1 c chocolate chips (HU or Enjoy Life are great brands)

*If using einkorn, the dough will be sticky and the cookies will look different; they will still be equally tasty and you won’t feel like crud after eating them!

Directions:
1. Preheat oven to 350 degrees F.
2. Cream together butter and sugars until fluffy and light in color. Add egg and vanilla and blend in.
3. Mix in flour, baking soda and salt. Stir in chocolate chunks.
4. Using a cookie scoop, drop dough onto a prepared baking sheet. Bake for 8-10 minutes, until barely golden brown around the edges.
5. Remove from baking sheet and let cool completely. Makes about three dozen.
