Even though it is only 41 degrees here today AND it snowed this morning, I thought lemon poppy seed bread would be a great start to spring! This recipe is amazing, but next time I might add some sour cream or plain greek yogurt for extra moisture.
What you’ll need:
- 1/2 cup unsalted butter, softened
- 1 cup sugar
- 2 eggs
- 1 2/3 cup flour
- 3/4 cup buttermilk
- Zest of 1 lemon
- 1/4 tsp salt
- 1/2 tsp baking soda
- 1 TBSP poppy seeds
For the glaze:
- 3 TBSP lemon juice
- 1 TBSP sugar
- Preheat oven to 350 degrees
- Prepare loaf pan with spray or crisco
- In a mixing bowl, combine sugar and butter until light and fluffy
- Add eggs one at a time, mixing after each
- Add flour, buttermilk, lemon zest, salt and baking soda
- Stir in poppy seeds
- Pour prepared batter into pan and bake 40-50 minutes (this really varies depending on your oven). When a toothpick comes out clean, it’s done
- Cool completely
- Brush on lemon glaze
