Lemon Poppy Seed Bread

Even though it is only 41 degrees here today AND it snowed this morning, I thought lemon poppy seed bread would be a great start to spring! This recipe is amazing, but next time I might add some sour cream or plain greek yogurt for extra moisture.

What you’ll need:

  • 1/2 cup unsalted butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1 2/3 cup flour
  • 3/4 cup buttermilk
  • Zest of 1 lemon
  • 1/4 tsp salt
  • 1/2 tsp baking soda
  • 1 TBSP poppy seeds

For the glaze:

  • 3 TBSP lemon juice
  • 1 TBSP sugar
  1. Preheat oven to 350 degrees
  2. Prepare loaf pan with spray or crisco
  3. In a mixing bowl, combine sugar and butter until light and fluffy
  4. Add eggs one at a time, mixing after each
  5. Add flour, buttermilk, lemon zest, salt and baking soda
  6. Stir in poppy seeds
  7. Pour prepared batter into pan and bake 40-50 minutes (this really varies depending on your oven). When a toothpick comes out clean, it’s done
  8. Cool completely
  9. Brush on lemon glaze
